Christmas Eve Dinner

The last few days before Christmas were a flurry of cooking activity. On the 22nd, I baked tortière, pumpkin pie, chocolate pumpkin brownies (this time without the coffee), while my husband made bread machine corn bread.

On the 23rd I made my first attempt at German stollen, banana nut muffins, and the ill-fated pumpkin pie; my husband baked corn meal muffins. Of course, we cooked dinner both days as well.

Then, on the 24th, I made Nan’s pan rolls, rosemary bread in the breadmaker, and deviled eggs. I’d planned to make orange-glazed carrots & parsnips, but we forgot to buy carrots and there was no way I was facing the stores on Christmas Eve, so that got written out.

Then we hosted Christmas Eve dinner for our little family, plus my in-laws and my brother-in-law. Usually this dinner is hosted by my husband’s parents, but they are currently between homes, having sold their house in October but with their new condo not being complete until the start of February. So this year it was up to us to make this family tradition happen. This dinner is traditionally consists of (and no one can tell me why) cabbage rolls, which my mother-in-law made this year, and tortière, which I made. I also added the pan rolls, rosemary bread, and deviled eggs with lumpfish caviar.

I tried to honour my mother-in-law’s German heritage by also serving stollen, for which I used the Taste of Home Almond-Filled Stollen recipe and The Spruce’s Easy Almond Paste recipe, since I couldn’t find almond paste in any of the local shops. Sadly, the dish went down like a lead balloon. I mean, I overbaked one loaf (the recipe makes three), but I didn’t serve that one. Even so, only two slices were even eaten with or after Christmas Eve dinner. The bread rose nicely and had a good texture, although I can’t be much of a judge of the flavour because I don’t really like candied fruits (I don’t like fruitcake either for that very same reason). I think I’ll just forego making this bread next year if we host this dinner again. It was a lot of work and nobody seemed to like it. Maybe I’ll just make gingerbread instead; at least that I’ll eat if nobody else does!

Boxing Day

Boxing Day in our family is mostly a relaxing day where we play with our new Christmas toys and then head over to my parents’ place for the traditional turkey dinner. (I would have taken pictures of the food, but we all dug in so quickly that I didn’t have a chance!) Mom’s turkey dinner includes stuffing, gravy, Brussels sprouts, mashed potatoes, butternut squash and apple casserole. Dad makes Yorkshire pudding that we either cover in gravy or spread with butter.

My contribution to the meal this year was my usual pumpkin pie. It’s usually one of my best desserts, but I was really disappointed with it this time. The consistency was good, the crust was reasonable (considering it was in the fridge for two days), but the filling was almost bitter. I distinctly remember putting sugar in the filling, but I doubled the recipe and I think what I did was double everything except the sugar. This also means that I have a second, bitter-tasting pumpkin pie sitting in my freezer that I might just throw out. What a waste. It was almost palatable smothered in whipped cream, but that’s not a ringing endorsement.

See, this is what happens when you bake for three days straight in preparation for a holiday: something’s bound to get messed up. I should have just thawed one of the berry pies that I’d frozen for future use back in the summer. I wanted to be traditional with pumpkin pie, but in retrospect it would have been better to lighten the cooking load a bit. Oh, well. Maybe I’ll have learned my lesson by next year.

Ditto

Taffy Lane in Orleans (a suburb in the east end of Ottawa) is well known throughout the city for its possibly-excessive number of Christmas lights. Traffic moves slowly on this residential street almost every evening throughout December as people walk and drive to check out the decorations. They’ve been doing this for over thirty years! My children and I love this street and make a point of visiting at least once a season — preferably after the snow flies, because the light reflected off of the snow makes everything that much more sparkly.

This year I forgot to bring along my good camera, but I had to snap a few photos of these two front yards:

Chicken Bones

Over the weekend I hit one of the local bulk food stores, and while I was there my attention was drawn to what I thought were real Chicken Bones. Okay, not real chicken bones, but the candy named after them. Chicken Bones follow in the grand tradition of naming confections after the parts of animals that they superficially resemble, just like Beaver Tails and bear claws. At any rate, I thought I was getting the Ganong original chicken bone candy, but in retrospect I may have been getting an imitation.

Real or fake, Chicken Bones were an essential flavour of my childhood holidays. Unlike the ubiquitous mint of candy canes, Chicken Bones are a strong cinnamon candy with a touch of dark chocolate at the center. Now, I wouldn’t have known to make this comparison as a kid, but as an adult I can definitely say that they remind me of Fireball whisky.

Chicken Bones are a really Maritime thing, although they’ve made their way to the rest of Canada somewhat sparsely over time. That isn’t to say that they’re universally loved out East; I know a fair number of people who can’t stand them, but they are definitely ubiquitous. My Nan, who was from Britain but lived almost sixty years of her life in small-town New Brunswick, used to buy Chicken Bones around the holidays, along with After Eights and liquorice allsorts. Chicken Bones have a flavour and smell that I most strongly associate with her. Now that she has passed away nobody else around here seems to serve them. So when I saw them at the bulk food store, even if they were imitations, I had to pick up a few. I do miss my Nan around Christmas, since I spent so many of these holidays in her company. But sometimes keeping the little traditions alive helps to bring her back just a little bit, which is especially important this time of year, I think.

Sick Day Part 2

I’m at the tail end (hopefully) of recovering from my cold, and unfortunately my kids have caught it too. Well, they might have been the ones to bring it home in the first place, elementary school being the wretched hive of scum and villainy that it is. At any rate, I kept the kids home from school yesterday in an attempt to speed up their recovery.

I gave the kids the option of homemade chicken noodle soup for dinner, since it’s a traditional kind of food to eat when you’re not feeling well. They vetoed this idea, and I was willing to be vetoed, as I hadn’t actually started cooking anything yet. At first they voted for instant mac-and-cheese, which I said no to. I can’t tell you how much it frustrates me that it doesn’t matter how many original and tasty meals I prepare, they’d live off of 99¢ dried pasta with powdered cheese sauce, given half the chance. Next they argued between themselves between bacon and eggs and trout with teriyaki sauce over rice. A quick trip to the grocery store brought the decision firmly down to bacon and eggs, since trout was not on special.

So our family dinner last night was eggs over easy, reduced-salt bacon, freshly baked Light Wholemeal Bread (Bread Machine: How to Prepare and Bake the Perfect Loaf (Jennie Shapter, 2002), page 69), and a side of sliced strawberries with a sprinkle of sugar. The girls were even up to hulling and slicing the strawberries. All in all, not a bad dinner for a house full of sickies!

Childhood Family Dinner

Yesterday I had a million and one things to do in order to prep for the party on Saturday, so I really needed to make a dinner that I could probably have cooked in my sleep. This was the kind of dinner that I had regularly as a kid and was one of the staples of how I learned how to cook, way back when. A few small things have changed here and there, but it basically tastes the same.

I baked chicken thighs that were sprinkled with powdered onion soup mix. When I was a kid, boned and skinned meat was way too expensive for everyday meals, so it would have been whole chicken legs (drumstick and thigh), bone-in, skin-on. I served it with whipped potatoes; as a kid, that would simply have been mashed, no fancy schmancy electronics like a hand mixer. The corn was exactly what I grew up with: boiled from frozen, generally in the microwave.

We ate all kinds of other food, of course. My mom used to hang out with a Lebanese couple, and they exchanged recipes and techniques, so Mom made great Lebanese food. We ate all kinds of pasta and roasts and fancy Sunday dinners. But when push came to shove and we had something going on on a weekday evening (and with both my brother and I in hockey and Guiding/Scouting, that was most evenings), this was our fast, easy, everybody-likes-it kind of meal. To me, this kind of dish is a comfort food, because it brings back fond memories of family togetherness. And as a bonus, now that I’m a parent myself, there’s nothing in a supper like this that I have to fight to get my kids to eat!

Oh, and if you think that my parents wouldn’t have served supper on a plate with a skull and bones on it, on top of a skeleton-print tablecloth, you probably haven’t met my parents. Trust me, if they’d had those things, they would have used them in a heartbeat.

Canadian Thanksgiving

Although today is technically Thanksgiving here in Canada, my family celebrated yesterday. I know that a lot of other people I know hereabouts do the same. Having Thanksgiving dinner on Sunday combines the tradition of a Sunday family dinner with the practical consideration of a stat holiday on the Monday. This means that out-of-town guests can travel in on the Friday night or Saturday, then go back home on the Monday, i.e. no traveling the day of celebrations and no need for most to miss any work.

Here in Canada, Thanksgiving is mostly a secular harvest festival, although some religions do incorporate thanks for a bountiful harvest into their liturgical calendar. Unlike Americans, we don’t have a tradition of the First Thanksgiving (our history is markedly different than our southern neighbours, with our first European settlers being predominantly explorers, hunters, and trappers). We also celebrate this holiday much earlier, i.e. the second Monday in October instead of the fourth Thursday in November. We used to celebrate Thanksgiving later in the season, but the earlier date keeps it from conflicting with Remembrance Day (November 11th) and, on a practical note about climate, is also when the bulk of the harvest has been brought in this far (and farther) north. Heck, the Prairies often see snow as early as September.

I started cooking the dishes that I was going to bring to Thanksgiving dinner on Saturday. I began with pumpkin pie, which was a combination of the Purity Pastry crust from page 73 of the Purity Cookbook (Elizabeth Driver, 2001 edition) and the Pumpkin or Squash Pie filling on page 686 of the Joy of Cooking (Irma S. Rombauer & Marion Rombauer Becker & Ethan Becker, 2006 edition). The filling pulled away from the crust since I had to store the pie in the refrigerator overnight, but it still tasted just fine. Due to food sensitivities in the family, I substituted coconut milk for the heavy cream/evaporated milk specified in the filling recipe. I have done this for years now, and I find that it tastes almost identical to using cow’s milk. That being said, I’ve learned that it takes much longer for the filling to set this way. To compensate, I don’t glaze the crust, as it causes it to burn over the long cooking time. Also, I put the pie plate on a baking sheet when I put it in the oven (something I do when making any type of pie), which both helps protect the bottom crust from burning and keeps any filling overflow from burning onto the bottom of my oven.

I cooked a small pumpkin to make the pumpkin pie instead of using canned (I like the flavour better that way), and I had some leftovers squash puree that needed to be used up, so I made Pumpkin Bread (page 628, Joy of Cooking) as well. I made this quick bread loaf with coarsely chopped pecans and golden raisins, as that’s what I happened to have in the pantry. It’s a rather lovely, dense loaf, as this kind of bread tends to be, and it smells divine. Unfortunately, since there are nuts in it, I won’t be able to send it to school as part of lunch for my girls in the upcoming week.

Since I had the time (which I never seem to when I’m carving Jack-o-lanterns for Halloween), I saved the pumpkin seeds and roasted them in the oven with a bit of olive oil and salt. These are one of my favourite fall snacks, and the smell of them cooking takes me right back to my childhood.

OF course, no family dinner around here would be complete without a batch of Nan’s Pan Rolls. It’s especially fitting this time of year, since Nan passed away four years ago this weekend. Making one of her signature dishes is a fitting way to remember her, I think.

This was Thanksgiving dinner at my parents’ place (bottom to top): Yorkshire pudding, squash & pear casserole, roast turkey, gravy, bread stuffing, pan rolls, Brussels sprouts, mashed potatoes, and steamed asparagus. This may seems like a huge spread, with all of that food for only six of us. However, traditionally you only have a little of each dish at the actual dinner, which is more than enough to feed you to bursting, and then you eat leftovers for the following week. Generally it’s an informal recreation of the dinner on day 2, then (depending on the size of the bird) some kind of casserole on day 3, then hot turkey sandwiches on day 4, then turkey soup or stew on day 5, and so on.

Mom’s Birthday Dinner

We celebrated my mother’s birthday this past Saturday. At her request, I hosted dinner at my house and made her up some of my ramen — which somehow she had never tried before. The version that I chose to make was Furikake Salmon Ramen (page 82 of Simply Ramen by Amy Kimoto-Kahn (2016)); the recipe is also available online here. This recipe uses a shoyu base (page 8, or online at easypeasyjapanesey.com), which I made up in advance in my slow cooker. I remain rather enamored of this base recipe, but every time I make it I remind myself that sometime I really need to try the tonkotsu base, which is my favourite but appears much more difficult. I used soft-boiled eggs instead of marinated half-cooked eggs, mostly due to time constraints. I also used packaged noodles; one of these days I will make my own, but that really requires a pasta maker, which I don’t own. I didn’t use the kind from the instant soup packages, as I find they get soggy much too quickly, but instead a package of dried noodles on their own for which I unfortunately can’t read most of the label.

The real star of this dish is the salmon. I was lucky enough to find it on special at the grocery store, pre-portioned and ready to go. The furikake topping was delicious even though I used North American mayonnaise instead of Japanese-style. There were some leftovers and I really look forward to having them served over rice in the next few days. I think that this topping is going to become part of my regular dinner roster; it would probably be good on other pink, oily fish like sea trout.

In our family, there’s always dessert with a birthday dinner, even if you’re stuffed from the meal itself — that just means that you take a breather and have the treat later in the evening. This year I made apple pie using fruit that I’d grown on my own tree in the back yard. For the chocolate lovers, Dad made brownies with chocolate icing, which were delicious and, if you know my dad, a very special treat, since he rarely bakes. We served it all up with whipped cream and/or vanilla ice cream (and dairy-free alternatives thereto). Oh, and candles! I was thrilled to find that it’s possible to get the candles that burn with coloured flame at the dollar store these days. I used to have to go downtown to a specialty store to buy them.

So happy birthday to my mom! Love always to the woman who helped shape me into the person that I am (whether that’s a good thing or not is a matter of opinion).
