Leftover Stew

Yesterday was a toss-up for reasons not to send the kids to school: on the one hand, it was a snow day, and on the other, they were both sick anyway. So I kept dinner simple and made a stew out of all of the leftover bits and pieces I had in the fridge. Honestly, a traditional stew (at least the way I learned it) is a bit of whatever you’ve got around anyway, so it seems fitting.

The stew contained beef, onions, garlic, carrots, baby potatoes, celery, homemade beef broth, store-bought beef broth, pearl barley, red wine, fresh thyme, fresh sage, a bay leaf, and salt. I whipped it up in the Instant Pot in about 45mins, including preheating/venting time. It wasn’t the best stew I have ever made, but it was tasty, hearty, warm, and went down easily for those with sore throats. I’ll consider it a win.

Hearty Hamburger Soup

The plague, aka the nasty cold with a sore throat and a cough that has been going around, hit our house hard this week. While I am desperately trying to fend it off, Thing 2 and my husband have succumbed, and Thing 1 is starting to show symptoms. It’s also been ridiculously (if seasonally) cold the last few days, averaging about -35°C (-31°F) at night with the wind chill. All of this together means that the best thing for everyone to eat is a nice, hearty soup.

So last night I made Hearty Hamburger Soup in my Instant Pot. It’s actually a stove top recipe, but it’s easy enough to adapt; I just did all the sautéing in the cooker, drained off the fat, added the rest of the ingredients and then pressure cooked for 30min. This is a dish that I’ve been meaning to make for years, and the ingredients are generally the kind of thing I have stocked in my pantry and freezer. I’m told that my aunt makes a killer version of this dish, but I haven’t been able to wheedle her recipe away from her. The Allrecipes version was quite nice, though. I made the accompanying bread earlier that day in the bread machine; it was Egg-Enriched White Loaf on page 67 of Bread Machine: How to Prepare and Bake the Perfect Loaf by Jennie Shapter (2002).

Leveling Up the Mac and Cheese

Believe it or not, I’m still trying to use up the Christmas leftovers, although at this point I’m left with the stuff that keeps well like cold cuts and hard cheeses. Last night I decided to continue using up some of those leftovers by making a batch of Mom’s Homemade Macaroni & Cheese.

Now, it may look a bit anemic because I didn’t use a cheddar that was dyed orange, but taste-wise it was anything but! The cheese was one of my personal favourites, Balderson Royal Canadian (2 Year) Cheddar. This brand has the added bonus of being relatively local; their original factory was in Lanark County, although they’re now owned by Parmalat. Although this mac and cheese can be made with just about any cheddar or other sharp, hard cheese (and I think I’ve used them all over the years), including cheap store brands, it really shines with something with a bit more flavour. Despite making an entire batch, after last night’s meal there were no survivors leftovers, which is the ultimate compliment to the cook.

As an addendum, I’ve discovered that there is lactose-free milk and lactose-free cheddar, so if you’re like me and are lactose-intolerant, you can still make this dish. Unfortunately, so far as I know Balderson doesn’t make an official lactose-free cheese yet. However, according to Life Hacker, grocery chain Wegman’s says:

An easy way to check for lactose in cheese is to look at the Nutrition Facts under “Sugar”. Since the sugar in cheese is lactose, you can easily see how much lactose the cheese contains. If the sugar is listed as zero, then the cheese contains no more than half a gram of lactose per ounce. Compare to 12 grams of lactose in an 8 ounce glass of milk.

According to the Balderson Royal Canadian (2 Year) Cheddar official nutritional information, the sugar content is 0g, so if a lactose-intolerant person is going to treat themselves to cheese, this would be a good choice. So, like me, you could combine lactose-free milk and this delicious sharp cheddar (although you may be a bit paranoid and want to take some Lactaid in advance just in case).

Instant Pot Beef and Guinness® Stew Recipe

After my success with the Instant Pot Beef Bourguignon, I really wanted to use my new toy to make some Guinness® beef stew for my husband, since it’s one of his favourites. Unfortunately none of the Instant Pot cookbooks that I bought after Christmas (because of course that was one of the first things I bought) contained this recipe. I’ve had fantastic luck with the Chef John’s Beef and Guinness® Stew, which creates a delicious stove-top version of this dish. To try and keep the flavour the same as the version we love, I adapted the preparation method for the Instant Pot. Here’s what I did:

Instant Pot Beef and Guinness® Stew
Serves 6

Cut* into small pieces:
4 slices low-sodium bacon
Peel and dice:
2 medium-sized yellow onions
Turn on the Instant Pot and select the Sauté program. If necessary, press the Sauté key repeatedly to toggle to the Normal setting. Wait until the LED displays “Hot”.
To the inner pot, add:
1 Tbsp olive oil
Stir the bacon and onions into the oil and cook for about 5 minutes, stirring often, until the bacon is cooked and the onions have begun to turn clear.
Add to the pot:
2 1/2 lbs (1.1Kg) boneless beef chuck**, cut into bite-sized pieces
Sprinkle the mixture with:
1 tsp salt
1/4 tsp black pepper
Press the Sauté key repeatedly to toggle to the More setting. Being careful not to burn the onions, cook until meat has browned, about 5 minutes. Stir often.
Press the Sauté key repeatedly to toggle to the Less setting.
To the pot, add:
1 can (440mL) Guinness® or other dark beer
1 cup low-sodium beef stock
5 cloves garlic, minced
1/4 cup tomato paste
4 sprigs fresh thyme OR 1/2 tsp dried thyme
3 carrots, cut into bite-sized pieces
3 stalks celery, cut into bite-sized pieces
1 tsp white sugar
Stir all ingredients together until evenly mixed.
Press Cancel on the cooker.
Place the lid and turn to lock. Turn the steam release handle to the Sealing position.
Select Pressure Cook, High Pressure, and set for 30 minutes. 10 seconds after settings are set, the cooker will beep three times and display “On” to indicate that it has started the preheat cycle.

While the Instant Pot program is running, you may wish to make:
4 cups mashed potatoes (OPTIONAL***)

When the cooking cycle has finished, the cooker will beep and enter the Auto Keep Warm mode. (If the Auto Keep Warm function has been turned off, it can be turned back on at any time.) Once the cooking is complete, allow the pressure to release naturally for 10 minutes, and then turn the steam release handle to the Venting position to let the steam out for a Quick Release. Once the steam is safely released, remove the lid.
Turn the cooker back on to Sauté > Normal and simmer stew until it has thickened somewhat, about 15 minutes. While thickening, stir regularly, and remove the sprigs of thyme, if using fresh.

Serve stew in soup bowls, either as-is or atop a mound of mashed potatoes with a divot in the middle to hold the toppings.

*I find that bacon is easiest to cut up using kitchen shears.
**Most kinds of beef are good in stew, so use whatever is in your budget. The pressure cooking (or slow cooking, in traditional stews) will transform even the toughest cuts into something you can cut with a fork. Whatever the cut, make sure to cut off the worst of the fat, since the texture can become off-putting.
***I prefer this stew served over mashed potatoes to soak up all of the lovely broth, but many people like it plain.

Pulled Pork

Last night we had my brother-in-law over for dinner again, so I had to make a meal that was filling enough for a family of four and a grown man who is seriously into Muay Thai. I settled on pulled pork, using my trusty formula (not really a recipe per se).

This time I served it with mashed potatoes and steamed asparagus, although it would have been a perfect day to run the oven and make some fresh bread. I don’t think it went above 15°C (59°F) and it rained most of the day, so it was pretty damp as well. That’s not horrible weather for spring, but by the time we hit June around here we expect it to be a bit warmer. I have been kind of hoping to start working on my garden this week, but the weather just hasn’t been cooperating. At this point I’m just growing a fantastic crop of weeds, and that’s just sad. I can do better than this.

Warm, Hearty Suppers for Chilly Days

With my backlog of canning to do and a whole lot of events, parties, and decorating happening before Hallowe’en, I haven’t been making too many complicated meals lately. Now that the temperature has finally dropped (last night it dipped below freezing), that means that I’ve been trying to make hearty suppers that don’t take too much advanced preparation.

Believe it or not, I’d never made Sloppy Joes before. It’s just not something we ever ate as a family. The closest we’d get would be open- or closed-faced sandwiches of chopped up bits of leftover beef, pork, or chicken, smothered in leftover gravy. But I’d taken the Amish Community Cookbook (2017) out of the library, and I wanted to try at least one recipe from it before I had to return it. I didn’t think that Sloppy Joes were a particularly Amish dish, but there was an uncomplicated recipe on page 63, so I gave it a shot. It was really good! I had my parents over for dinner and they liked it too. My mom pointed out that the sauce is actually a lot like the one she uses for slow-cooker pulled pork, and I have to agree (keeping in mind that I love pulled pork too).

The other night I needed something I could put together quickly, so I dug through my freezer and thawed out a couple of containers of curry butternut squash soup. I’m pretty sure that my mom made this dish and shared it with me, because I certainly don’t remember making it. The label was dated December 2016, though, so it might just be time making me forget. My husband pointed out that the labels were in his writing and the containers were our own, which indicates that I’d made the soup, but I think it’s just as plausible that I had to return my mom’s original container. Either way, I don’t know what the recipe was for this one (another one of those pre-blog things), but it was perfect for a cold fall evening. The biscuits I served alongside were Dad’s Biscuits, which I whipped up in about the same amount of time it took to thaw the soup on the stove.

Since we already had some steaming fresh biscuits, I cracked open the jar of mirabelle plum jam that my friend made from the fruit of her neighbour’s plum tree. I spread the jam generously on biscuits as dessert. My mouth is watering just thinking about that it. My friend was a little worried about the set, thinking that it would be a little bit too runny, but I thought it was perfect.

Despite the flowers (a hostess gift from my honorary aunt), this dish was anything but fancy. I made up some ramen using turkey broth (made from the bones of the Thanksgiving turkey) flavoured with a dash of Memmi Noodle Soup Base. I topped the noodles with leftover rotisserie chicken, soft-boiled eggs, and steamed carrots. My family added masago (capelin roe) and dried shrimp to their tastes. It was hearty, filling, and good for what ails you — especially if what ails you is the cold that seems to be going around right now. I’ve always found that steamy bowls of soup help clear out the sinuses.
