Algonquin Park Camping: Day 3

Day 3 of camping at Achray Campground dawned clear and sunny — the only truly summery day of our trip.

We strung up as many lines as we could to try and get everything to dry before we went home. I think it was a little bit futile, especially since the bottoms of the tents were pretty soaked.

We started the day with bacon and pancakes (Aunt Jemima Complete Buttermilk Pancake Mix) for everyone for breakfast.

I could only make one pancake at a time, but I just kept cooking until everybody was stuffed.

Then Thing 1 and I tool a walk along the lake shore while my husband and Thing 2 cleaned up.

There were a bunch of canoes pulled up on the beach, some of them day rentals, others belonging to people who had come in from the park interior. Some campers had cut their trip short due to the forest fires encroaching on their planned routes.

On our walk, we saw all kinds of small wildlife: frogs, tadpoles, and everything in between, minnows, small fish (but bigger than minnows), and even a water snake no thicker around than a pencil.

When we returned, Thing 1 and Thing 2 got changed into their bathing suits to play in the shallows while my husband and I struck camp. With the water only being knee-deep for at least a hundred feet, it was a perfect playground — and with our campsite being so close to the water, we didn’t have to worry the kids would be unsupervised.

After everyone was thoroughly cooled down in the lake, it was time for some hot chocolate and reading time as we tried to use up our camp fuel (an attempt which proved to be futile in the end).

We packed up the last of our gear and drove away from Achray, but it wasn’t long before we reached the entrance point to the Barron Canyon Trail (which is only 1.5km long, but is at a pretty steep pitch most of the time).

My husband had hiked this trail as a child, and he really really wanted us to see it too. The canyon is 100m (328′) deep at this point, and the top of the trail provides a fantastic view for miles around. It also is a straight drop down with no railings, which is a little bit vertigo-inducing. I kept a death grip on Thing 2’s hand whenever she even remotely neared the edge, since she has a bad habit of not taking safety warnings seriously. Heck, there’s even a sign at the beginning of the trail that reads, “Caution: This trail visits a cliff. Please keep children under control at all times.”

Thing 2 was very happy to sit for this photo, though, since she could see the Barron Canyon expanse without me freaking out (it’s further back than it looks).

I honestly didn’t know that we had terrain like this anywhere near home. It’s difficult to get an accurate impression of scale in photos.

Thing 1 was my husband’s responsibility, but her cautious nature meant that she didn’t tend to walk too close to the edge on her own. Actually, to get the best view she and my husband crawled on their bellies so that they could peek over the edge safely.

The best representation of scale I could get is when a canoe passed us by at the bottom of the canyon. That little line in the water is four people in a big fiberglass canoe.

It was a fantastic way to end a thoroughly enjoyable trip!

Algonquin Park Camping: Day 2

Day 2 of camping at at the Achray Campground on Grand Lake in Algonquin Provincial Park dawned rainy, but the precipitation quickly moved on. This left us with clouds in the morning, a brief rainstorm in the afternoon, and a mix of sun and clouds for the afternoon and evening. Unfortunately, there was never much of a breeze, so nothing we brought with us really dried out, but we had fun anyway.

The day began with cooking bacon, eggs, and toast (with bread machine bread baked in advance of our trip) on the old Coleman camp stove. I am particularly fond of the camp toaster, which was always my favourite part of the setup as a child.

It was a hearty and delicious way to start the day!

After cleanup we headed out to the lake, which is where we spent the majority of our day.

The shallow, sandy beaches meant that the kids were quite content to play and explore for hours.

We found teeny tiny catfish (at most an inch and a half long) in the weedy shallows, where they were industriously cleaning the lake bed.

There were also tonnes of tadpoles in every stage of becoming frogs — some had no legs, some had two, some had four, and some were basically frogs with tails — alongside full-grown frogs. A few swam by us while we were swimming, while others stuck to the weedier or rockier areas.

I honestly think that our favourite part of the day was all of the tiny minnows that swam around our feet and nibbled on our toes while we waded in the shallows. Video of that will have to wait until I can get it off of my other camera, but I think it’ll be what the kids remember the most from this trip.

When we headed away from the water we found wild raspberries, which was an unexpected and tasty treat.

I cooked dinner over the single-burner backpacking stove, since the old Coleman decided to act up for a bit. I basically made tuna noodle casserole, but with frozen corn instead of canned, and canned salmon instead of tuna. Also, having no oven, I couldn’t bake the dish.

I don’t think that my alterations improved the dish any; without the potato chips topping and baking to combine the flavours, it was pretty bland. I should at least have grated some cheese on top, but I didn’t think of it. But it was warm and filling and we were sitting somewhere dry, which sometimes is all you can ask for when camping. As a bonus, the only perishable ingredient was the frozen corn, which in its turn helped keep the other food cold.

Also, did I mention that there were butterflies? Well, there were a lot of butterflies. The monarchs in the area really like the milkweed blossoms, which were just coming out of bloom, and milkweed was everywhere. Apparently these monarchs are endangered, but you’d never know it from how plentiful they were around our little corner of the park.

Spending Time at the Lake

I was lucky enough to spend a few days this week at the cottage my parents are renting. We had a delightful time. Mornings were lazy and, when we finally dragged ourselves out of bed, I cooked brunch.

That’s bacon, eggs over easy, apple slices, and whole wheat toast — made of store-bought bread, which is unlike me. I decided I needed to remedy that situation and so after we cleaned up from brunch, I started to throw together some homemade loaves. I didn’t have access to the internet or my plethora of cookbooks, so I used the White Bread recipe from page 596 of the Joy of Cooking (Rombauer & Becker, 2006 edition). (Actually, I used the app since it has the whole cookbook on my phone and doesn’t need Internet access, but it’s the same recipe either way.) In the recipe I substituted olive oil in the same quantities for the lard and butter, which has worked in the past and did so this time as well.

That’s a horrible picture of the loons on the lake because my zoom lens isn’t spectacular. You’d think it’d be easier to get a photo of a bird that can grow to almost a meter long, but these ones had no interest in coming any closer. The loons were calling away while I was kneading my dough. I find it a very soothing sound, but I grew up with it. In understand that to some people a loon call, especially their mournful, echoing night call, can be kind of creepy. My father likes to tell us the story of going camping and being approached by frightened tourists in the next site over who were sure they were hearing the sobbing souls of the damned.

Anyway, after brunch and bread and loons, we all needed a dip in the lake…

Followed by a drive out to the ice cream parlour for a cool treat and some reading time.

It wasn’t too long before it was time to go back to the cottage to bake the bread, and then to make dinner. I made shrimp with garlic butter, jasmine rice with furikake, corn on the cob, and of course the freshly-baked bread.

Dessert was cherry drop biscuits baked the day before using the Rolled Biscuits recipe from page 638 of the Joy of Cooking (or the app again). I added a bunch of pitted, quartered cherries stirred into the batter and a sprinkle of sugar on the top of each biscuit before baking. I got lazy and just made them drop biscuits instead of rolled, and they turned out fine that way.

Then it was time for one last dip in the lake, followed swiftly by bedtime for the kiddos, who had had a long, fun day. I took the opportunity to bring my glass of maple Sortilège on the rocks out to the screened-in sun room (the mosquitoes are much too bad in the evening to simply sit outside) so that I could watch the sun set. It wasn’t the most spectacular that I’ve viewed from this spot, seeing as there wasn’t a cloud in sight, but I think I can live with that.

Bacon Goes With Everything

Last night I ransacked my freezer and pantry in order to continue the trend of preparing meals that don’t require long cooking times indoors, which would heat the house up unduly. I came up with a box of spaghettini noodles, a small container of last year’s basil pesto, a package of sole fillets, and almost a pound of reduced-salt bacon.

What that turned into was essentially a meal where there was bacon on everything. I boiled up the spaghettini, drained it, and coated it in pesto. Then I dredged the sole in flour mixed with a bit of garlic powder, salt, and pepper, and then I pan fried it. (Whenever I cook my fish like this, I can’t help but think of lightly fried fish fillets, though.) I cooked up all of the bacon in the microwave, chopped it into bits, and sprinkled it on darned near everything.

My family couldn’t have been happier.

Spelunking

We started Sunday with a hearty brunch eaten out on the porch at my in-laws’ cottage. I had bacon, eggs over easy, an everything bagel, apple slices, and a banana.

With this fuel under our belts, we made the drive out to the Bonnechere Caves, which are caves carved by the Bonnechere River into limestone deep underground. I’d been there once as a child, and again as an adult bringing my eldest along, but this was the first time that both kids had been old enough to partake in the tour. I think that it was an experience that they won’t soon forget!

The tour started outside along the Bonnechere River (you can actually see the natural entrance to the caves on the left).

Then you take a man-made staircase down into the bowels of the caves as part of a guided tour. We’d been to the Lusk Caves a few years ago, where the caves are left au naturel (although there is a trail leading to them) and there is no guide, so this was a very different experience. There is a boardwalk over the naturally jagged stone floors, and the caves are lit.

Despite the somewhat staged air that the man-made additions add, they did allow me to get a much clearer look at the rock formations.

For the last section of the tour, the path runs under the water table, so concrete barriers and pumps are put to use to make the area dry enough to walk through. This lets you see exactly how deep these caverns really go. Although if you’re claustrophobic, I can see how the idea of all of that ground above your head would be difficult to deal with. One lady kept making comparisons to The Cave…

It was a very neat experience. Maybe one day I’ll be lucky enough to take yet another generation of children to explore this enthralling natural formation.

Of course, after all of our spelunking we were ravenous, so we headed back to the cottage for dinner. We chowed down on grilled chicken legs with hot sauce, roasted fingerling potatoes, and a salad of mixed greens, red grapes, and ground cherries. What a great way to round out the day!

Breakfast for Supper

Last night I was running errands with the girls until just before dinner time, so I needed a quick, easy, and nutritious meal to feed the family. I chose bacon (cooked in the microwave — it’s much less messy that way), eggs (over easy or scrambled, depending on preference), enormous everything bagels from Costco, and a homemade fruit salad.

It’s a good thing that I chose such a simple dinner, actually, because my brother-in-law popped by around dinner time. I don’t think he was originally planning to join us for a meal! However, it’s quite easy to throw on a couple of extra eggs and pieces of toast. My door is always open, but for some meals it’s definitely easier to “throw an extra potato in the pot”, as my mother would say.

Breakfast Bagel

I noticed the other day that there was a Cadman’s Montreal Bagels open now at the intersection of the Vanier Parkway and Montreal Road, so I thought that I’d try it out. Bagels are a staple in our household, whether I make them myself or buy them from a bakery or grocery store. When I was a kid, my parents would take us almost every weekend for breakfast at Bagel Bagel at the corner of Clarence and William in the Byward Market, where I believe the Cornerstone Bar and Grill is now. I’ve also been lucky enough to visit Montreal frequently and try fresh bagels there from a variety of restaurants and bakeries. The signs outside of Cadman’s proclaimed that they were the best Montreal-style bagels in Ottawa, so I was intrigued.

I purchased the All Day Breakfast Bagel Combo for $6.59 (plus tax), with an additional bowl of fresh fruit salad for another couple of bucks. The sandwich is on any of their freshly-baked bagels (I chose pumpernickel) and is topped with an egg, cheddar cheese, and bacon, and comes with a latke and a drink. One of the things that my photo fails to convey is how absolutely huge the portions are. The bagels here are especially massive. I came out of there stuffed after a late breakfast and didn’t need to eat again until dinner.

But are they the best Montreal-style bagels in Ottawa? Personally, I don’t think so. A good Montreal-style bagel is, to me, quite chewy, and these bagels were very soft. They also didn’t have the slightly sour tang that I associate with that kind of bagel. Perhaps they’re not working the dough long enough, boiling them long enough (or at all?), or using a high-enough protein flour. Whatever the reason, these bagels are really light and fluffy. Now, I know that some people prefer theirs that way, and there’s nothing technically wrong with a fluffy bagel. However, to me a Montreal-style bagels should be chewy and dense.

That being said, overall the breakfast was quite tasty, and it was good value for money. It wasn’t the best Montreal-style bagel I’ve had in Ottawa, but it was pretty good in its own right. So I’ll probably be back.

Cheater Chicken Bacon Quesadillas

Basic quesadillas aren’t exactly difficult to make in the first place, but some nights I’m looking for an even quicker, easier meal. Not only that, but a meal that the kids can help me prep (although it’s debatable if they speed anything up, honestly). Truthfully, it’s more like a grilled cheese on tortillas than a true quesadilla, but everyone in the family likes it. It whips up nice and quickly while I make up a salad.


The dressing is for the salad, not the quesadilla… Although ranch and chicken and cheese are a proven taste combination.

It doesn’t really have a recipe per se, since it’s mostly made using leftovers. Each quesadilla starts with a tortilla on a baking sheet, then a layer of grated cheese (the kids like sharp cheddar, while my husband prefers mozzarella and cheddar mixed, and I stick with whatever I can get lactose-free). Next is a handful of leftover chicken — often from a store-bought rotisserie bird, but roasted does well too, and sometimes we’ll substitute whatever other leftover meat is in the fridge. If I’m lucky, I’ll already have some bacon made in advance, but most of the time I have to cook it fresh, which is easy enough in the microwave. Then it’s another tortilla on top. I bake it in a preheated oven at 350°F (175°C), checking every couple of minutes, until it is warmed through and the cheese is nice and melted. If we’re feeling particularly fancy, I’ll serve it with sliced avocado and sour cream (lactose-free again for me), and a salad. That’s all there is to it, really!

I know, I know, people who like genuine Mexican food are probably squirming by now. There aren’t even any onions or peppers or anything in this to give it any spice! And I do agree. This is Kraft Dinner to homemade macaroni and cheese, Wonder Bread to a fresh-baked loaf of rye. But it’s quick, it’s easy, it uses up leftovers, it’s not too unhealthy (especially when paired with veggies of some kind), it’s miles better for you than fast food… And some days that’s exactly what the doctor ordered.

Bacon-Wrapped Prime Rib

So Einfach Tasty (the German version of Tasty) got my attention again with their video for how to make Bacon-Wrapped Prime Rib (English version here), which looked so delicious that I just had to try it. Generally, I suck at roasts; they’re either completely tasteless, or dry, or both, no matter how many techniques I try to fix it. But I figured that with a combination of butter, spices, and bacon rubbed all over the outside of the roast, I shouldn’t have too many problems with this recipe. Also, I bought a meat thermometer. So that helped too.

I only made two changes to the recipe. The first was that I used the circular bacon that I had left over in the freezer, so I couldn’t exactly weave it. I ended up draping it over the roast instead, which worked just fine. The top piece curled up when cooking and singed a bit because it was nearer to the heating element, but I just removed it before serving.

The second was that I used an inferior cut of meat, and you can see this especially in the lines of gristle through the center of the slice. So long as I ate around these unpalatable pieces, it was just fine, though!

I really did like how this roast turned out. It was probably the best one I've made yet (although there really isn't much competition for that title). I served it with boiled baby potatoes and steamed carrots. The kids ate their servings and asked for seconds, but I'm pretty sure they would have been happier if I'd only served them bacon without the beef. I wish I'd had a chance to try the gravy, but unfortunately all of my drippings burned solid to the bottom of the pan, so I didn't get to use them. Ah, well.

Low-Prep Suppers

I kind of have my kitchen back again… Okay, not the whole thing, but the counters and table are clear again, so I can cook properly. I made shepherd’s pie for dinner (but without the cheese topping, to reduce the amount of dairy and make it better for my gut). However, the meal was running late and we dug into it much too fast for me to take pictures. Instead, I have photos of the bread that was cooking while we were eating dinner:

That’s Beer Bacon Bread found on page 44 of Betty Crocker’s Best Bread Machine Cookbook (Betty Crocker, 1999). I used a flat Guinness beer, a package of crumbled circular bacon, and chives from my window garden instead of green onion because that’s what I had on hand. It’s only the second time that I tried out any recipes for this book, and so far so good! There’s a Cottage Dill Loaf on page 152 and Brandied Pumpkin Bread on page 104 that I can’t wait to try.

Earlier in the week I had to make a few easy and quick meals that required little in the way of prep space, so I whipped up a loaf of Sally Lunn bread (page 25, also from Betty Crocker’s Best Bread Machine Cookbook), which I think called for an unreasonable amount of butter in the dough (6 Tbsp!), but I have to admit tasted quite nice. I used it to make grilled cheese sandwiches for the girls, with sides of sliced apples.

Of course I have issues with dairy (and at any rate I’d run out of cheddar), so I fried up a couple of eggs each for my hubby and I, and served it with the Sally Lunn, sliced apples, and mandarin oranges.

Earlier this week I went with a less bread-based meal and baked up some trout with in teriyaki sauce, which I served over rice with a side of asparagus.

I’m really looking forward to having this mini-reno complete so that I can try some new recipes! This hasn’t been nearly as time-consuming an affair as a full gutting of the kitchen (much as I’d love to be able to afford a 100% fresh new kitchen), but it’s still rather disruptive. At least it’s cheap!
